We saw you can use charcoal in the filter. Is GAC under this category?

Charcoal is a material in the list of items to be considered when designing your system but this should be taken as charcoal briquettes, not GAC (granular activated carbon) filters or loose GAC.  If you wish to use GAC, it will be a bonus item.
